Boy did they smell great while they were baking. They taste pretty fine too!
White Chocolate, Cranberry & Cinnamon Cookies
2 cups flour
1/2 teaspoon baking soda
170grams butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla extract
1 egg yolk
1 1/4 C chopped white chocolate buttons
1/2 C dried cranberries
1 t cinnamon
Preheat the oven to 165 ° C (325 °F). Grease two baking trays or line with baking paper.
Sift together the flour and baking soda. Set aside.
In a medium bowl, beat together the melted butter, brown sugar and white sugar until well blended.
Beat in the vanilla, egg, and egg yolk until light and creamy.
Mix in the sifted ingredients until just blended.
Stir in the chocolate and cranberries by hand using a wooden spoon, followed by the cinnamon.
Place tablespoonfuls of cookie dough onto the baking trays, spacing them at least 5cm apart to allow for spreading.
Bake for 15 to 17 minutes in the preheated oven, or until the edges are lightly toasted.
Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
