My dinner tonight. Easy, quick, healthy, yum!
Easy Vegetables with an Asian Twist
1 Zucchini, sliced
1 Carrot, peeled & sliced
1 whole Corn, sliced off the cob
Handful of green beans, ends trimmed, sliced in half
1 spring onion, sliced finely
Handful of almonds, roughly chopped
2 t sesame seeds
1 t garlic powder
Drizzle of sesame oil
2 t Vegetable oil
1 t soy sauce
Heat vegetable oil over med-high heat. Add all vegetables except spring onions and cook for 3-4 minutes.
Add almonds, spring onions, garlic powder, soy sauce and sesame oil.
Cook a further 2 minutes, stirring frequently.
Sprinkle over sesame seeds. Serve hot.
You could serve over noodles or rice and of course you could add chicken, meat or prawns if you so desire.
