As I’m sure anyone with children & busy lifestyles can attest, it is necessary to have one or two trusty recipes that can be relied on in a pinch. Especially if you value your sanity! Meal ideas that are quick to put together and satisfying no less!
This is one that my mother-in-law was kind enough to share with me. It’s the kind of thing I make during the afternoon on Athletics day when I know that getting home at 7pm with tired, hungry children is going to rid me of any ability to whip up even a quick pasta. Having this delicious all-in-one ready and waiting makes life less stressful!
Served with tomato relish (or sauce) and a salad, it’s a light meal for those nights when you just don’t feel like a lot. It’s also a perfectly adequate lunch dish.
This has definitely been one of my go-to’s over the Summer and I hope you love it too.
375g Zucchini, grated
250g sliced ham or 3 rashers of bacon, chopped
1 C Cheese, grated
5 medium eggs, beaten
1 large onion, chopped
1/2 C oil – I use ricebran or canola
1 C Self-raising flour
Mix zucchini, onion, bacon or ham and cheese, then add the oil and the beaten eggs and lastly the flour.
Line a lamington sized tin with baking paper and cook at 180 degrees Celsius for 40 minutes or until golden.
