I love to cook food from scratch and try my hand at new recipes and new ideas in the kitchen. But I’m a Mama of 3 kids and there are days when I just want the easy way out. I don’t love takeaways enough to splurge on them very frequently, but meal ideas like these are my go to when I just can’t be bothered cooking or when I want to make something a little less labour intensive.
Here are three quick and easy meal ideas using a rotisserie chicken. You can pick up a Macro Free Range Rotisserie chicken for $14.
Perfect for Summer lunches or dinners, shred your chicken and serve in a salad of your choice. This one was made with baby spinach leaves, sliced tomato and cucumber drizzled in a tasty dressing and freshly ground pepper and sea salt. Quick and easy, and especially delicious.
One of my kids favourite meals is this super fun and family friendly idea of a homemade Chicken ‘Burger’ Roll Station. Slice up sandwich fillings – tomatoes, lettuce, cucumber and cheese, set out relish and mayonnaise, -dinner or burger buns of your choice and the bowl of shredded chicken and let everyone make up their own roll to their liking. My kids go nuts for this!
