Ari of Ari Eats has been inspirational to me since the first time we met. Not yet 20 at that time, I was astounded at her maturity and level of talent both for creating food that was beautiful to look at but sounded amazing too, and for the level of professionalism she exuded both online and in the flesh. Her dramatic weightloss and health overhaul is nothing short of amazing and she’s an example of what one can do when they truly set their mind to it. Her blog is stunning and I love watching what she’s doing for herself as a blogger and business woman.

WHAT IS YOUR EARLIEST FOOD MEMORY? HOW HAS THIS DEFINED YOUR RELATIONSHIP WITH/ETHOS AROUND FOOD?
My earliest food memory would be as a kid when my Granddad would catch crabs and bring them home. We’d eat them and he’d give me the legs to break open and eat the meat out of.
TELL ME ABOUT YOUR PROUDEST FOOD MOMENT.
When I learnt how to make perfectly poached eggs! I had watched heaps of tutorials on Youtube and tried them out myself and finally found a method that worked for me. They’re now included in a whole bunch of my recipes.
WHAT IS YOUR BIGGEST FOOD DREAM? (WHAT IS YOUR LOFTIEST GOAL? WHAT DO YOU HOPE TO ACHIEVE IN YOUR FOOD JOURNEY?)
I would love to have my own cook book focusing on low carb recipes. I think it’s something that would help out a whole lot of people and I’d get to share my creations.
YOUR MOST FAVOURITE INGREDIENT AND WHY?
My favourite ingredient at the moment is nuts. I’ve been trying to limit my dairy intake and cashews make for the perfect creamy substitute when soaked overnight. Almonds are delicious for making nut butter that I’ve been adding to my morning smoothie too. And then there’s macadamias. I’ve been using these combined with cauliflower to substitute rice in sushi and also crumbed my chicken with it the other day.
IF YOU COULD CREATE THE PERFECT SCENE INCLUDING YOUR DREAM PERSON, IN A DREAM LOCATION INDULGING IN A DREAM MEAL – WHAT WOULD THAT LOOK LIKE? PERSON, PLACE AND MEAL?
I would have to say with my family (Mum, Dad, Brother and Sister) somewhere high looking over the sea in the summer. We’d have cheese boards, fresh seafood and salads. That’s a pretty standard catch up with family but I couldn’t think of anything more perfect.
