My family is not so traditional when it comes to Christmas Day. My parents were never big on the whole Christmas tree decorating thing, and as my siblings and I have grown, for some crazy reason, they’ve all given up on the joy and excitement of gift giving. It kills me! Thankfully we recently adopted a Secret Santa arrangement so we at least get one gift each!
All that negativity aside for my own personal Christmas Grinches, if there is one thing we do well on Christmas Day, it’s eat! We eat well and we eat right. Despite not really being overly Christmassy, we love to gather together and spend time as a family at any opportunity we get and as a family of competent cooks and enthusiastic foodies, we go all out. This means that when the time comes to sit and eat, no one is disappointed at the spread.
Being non-traditional, we usually shun the traditional Turkey and hot roasted items, fresh shelled peas and new potatoes, instead focusing on delicious, fresh salads and a few yummy proteins too. A ham sneaks in for the non-vegetarians and a Salmon always makes an appearance somewhere on the table too.
This year I decided to get a little creative with my Salmon instead of sticking to the old faithful and boy was I glad I branched out. Although one I have used for years will continue to be a favourite, the combo I have come up with is a flavour sensation and a total winner!
Regal Salmon asked if I’d like to put together a Christmas Day dish using their incredible products, so what I’m about to share with you has been inspired by their quality ingredients and I’ve created this menu using a beautiful Regal Salmon fillet.
As delicious as Salmon is, I often find it a rich meal, so have created a salad that complements it perfectly in terms of cutting through that richness and offering freshness with acidity and a Lemon Creme sauce to serve alongside the Salmon that gives a fresh bite too.
Because we are living with relatives at the moment and because I knew we were going to end up with pretty much a banquet, I invited my siblings and their partners over for dinner to help eat. So enjoyed was every element of this meal, it has been requested that I repeat it again for Christmas Day. Mission fulfilled Regal Salmon!
